Veggie Egg Muffins

Ingredients
1 bunch of rainbow chardmushroomsspinachhalf dozen eggs1 whole onion1 green pepper
Directions
Stir fry all vegetables until cooked. Scramble eggs, this is easiest to do in a blender
rub coconut oil on each muffin tin
scoop out cooked veggies into each muffin tin, about halfway full
pour egg into each muffin tin

Serving Size: makes 12 muffins - using normal size muffin tins
