Ingredients
2 tbsp Extra Virgin Olive Oil2 cups dry lentils4 cups Swanson 99% Fat Free Chicken Broth1 cup chopped onion3/4 cup long grain white rice
Directions
Brown onion in olive oil.

Add lentils and stir.

Once Lentils are coated in oil and mixed in well with the onions, andd chicken broth, stir, and bring to a boil.

Reduce heat to medium-low and simmer for 20 minutes.

Add rice.

Cover and simmer for 60 minutes or until lentils and rice are tender.

Just like Grandma used to make them!

*Note: If you find that all of your broth boils away before the dish is done, add more liquid as needed.
