4 mashed, ripe bananas2 tbsp dark muscovado sugar1 egg1.25 cups flour1.25 tsp baking powder0.5 tsp bicarbonate of soda1 tsp ground ginger1 tsp ground cinnamonDash of salt
1. Preheat oven to 175C and grease a loaf tin.
2. Mix the mashed banana, sugar and egg together with a fork or whisk. Electric mixer not necessary.
3. Sift in the rest of the ingredients and mix until everything is just incorporated. Lumpy is fine.
4. Bake for 50 minutes. Allow to cool completely before slicing.
Serving Size: Makes six generous slices
