French Onion Soup

6 onions, sliced in strips2 Tbsp Butter unsalted6 Garlic cloves8 cups Beef stock, home-prepared from beef base1 tsp Thyme1/2 cup White Wine4 slices french Bread, toasted4 oz. part skim Mozzarella Cheese
Melt butter in dutch oven, add garlic and onions and saute until onions are translucent. Add beef stock and wine, thyme (and any other seasonings you like such as salt, pepper, bay leaves, etc) and let simmer for 10 minutes. In four oven safe bowls, divide equally the onion soup, top with the toasted french bread, followed by 1 oz. of the cheese on each. Broil until cheese is melted, or let it bake until it turns the cheese slightly brown (my preference!).
Super satisfying, fills you up, and tastes like you were SUPER naughty. :)
