Blue Cheese Veggie Chicken Saute

Ingredients
Chicken 3 ouncesBroccoli florets 2.25 ouncesonion sliced 1 ouncecucumber with peel 2 ounceRed Pepper 2 ounce
Directions
Cube chicken into small peices. Cook chicken in pan with olive oil spray (about 5 minutes: pieces need to be small and pan hot for fast cooking)
set aside
Saute all veggies together with olive oil cooking spray for about 5 minutes with lid on pan
Combine chicken with veggies and add sour cream and blue cheese until melted.
Serve alone or on brown rice.
