Spicy Turkey Sausage and Green Chile Quiche

- 2 large eggs- 4 egg whites from large eggs- 1 cup of skim milk- 1/2 cup flour- 1/2 tsp baking powder- 4 oz of Jennie-O Hot Turkey Sausage, chopped into small cubes- 1 medium onion, coarsely chopped- 1/2 cup chopped fresh or canned green chiles- 2 oz part-skim mozzarella cheese, finely grated- Light cooking spray
1. Heat a frying pan with cooking spray over medium heat. Add onions and saute until light brown.
2. Add hot turkey sausage and continue to cook until meat is brown and no longer pink in the center.
3. Add green chiles and saute until the mixture has lost some of its liquid. Remove from heat and set aside to cool slightly.
4. Stir together flour and baking powder with a fork, and set aside.
5. In a large mixing bowl combine the whole eggs and egg whites. Whisk until well combined. Add milk and whisk. Slowly add in dry ingredients and whisk until no flour clumps are left.
6. Mix in meat, onion, chile mixture and then pour into a well greased 10" glass pie dish
7. Sprinkle mozzarella over egg mixture. Some will sink and some will stay on top.
8. Bake at 400 F for 30 minutes or until top is lightly browned and a knife inserted into center comes out clean. The quiche will rise a lot in the oven and then deflate slightly like a souffle once removed (this is expected).
