Homemade Quiche

9" Pie crust1 cup all-purpose flour1/2 tsp salt1/4 tsp seasoning (cinnamon, depending on filling)2 tbsp sugar1/3 cup plus 1 tbsp butter2 tbsp cold water 1 tbsp vodkaFilling: (can prepare ahead or use leftovers)1/2 cup sauteed onions (lightly salted and peppered during sauteing)1/2 cup peppers, broccoli, mushrooms, etc. (lightly salted and peppered during sauteing)1/2 - 3/4 shredded cheese (cheddar mix)Custard mix:4 jumbo eggs3/4 cup light cream3/4 cup heavy cream1/4 tsp white pepper1/4 tsp nutmegDash salt
-Place pie crust in pie plate and prick with fork. Chill for at least 30 minutes (usually I do this the night before)
-Blind bake crust until it is a light golden brown (bake in a 375 degree oven with pie weights)
-Place vegetables/meat in bottom and sprinkle cheese over filling mixture.
-Bake in 375 degree oven for about 45 minutes. Top will be slightly brown and should be almost firm to touch. Depending on your oven it could take another 10-15 minutes.
Serving Size: Makes 8 servings
