Tofu Sloppy Joes

2 pkg Tofu1 cup Onion, chopped1 Red Bell Pepper, chopped 1 Tbsp dried ParsleyPepper, to taste1 cup Mushrooms, chopped3 cloves Garlic2 tbsp Olive Oil1 pkg (10 oz) Spinach, frozen1 can (6 oz) Tomato Paste6 Tbsp Steak Sauce (or BBQ sauce)8 Buns
Thaw spinach while preparing the rest of the veggies. Heat olive oil over medium heat and sautee the onions first, until soft. Add peppers, sautee until tender. Add the mushrooms and garlic. Sautee for an additional 3-5 minutes until tender and blended well. Add spinach and cover for 3 minutes. Add can of tomato paste, stirring and mixing it in to the veggies. Cover for 2 minutes. Add steak sauce and dried parsley. Crumble tofu with fingers over the pan and stir well. Cover for additional 10 minutes, stirring occasionally.
