Sweet Potatoe Soup

Ingredients
4 large sweet potaotes1 small onion6 cups of low sodium vegetable broth1 jar (2 cups) of chunky salsa1 tbsp lime juice1 tbsp olive oil
Directions
Fry onion in olive oil in large saucepan. Add broth and cut up sweet potatoe. Bring to a boil. Once sweet potatoes are tender, remove from heat. Add 1 jar (2 cups) of chunky salsa. Add 1 tbsp of lime juice. Place soup in a blender and purée. Serve immediately.

I've also added broccoli to this recipe with great success!
