Broccoli Salad

Salad:4 Broccoli heads, chopped small1/4 cup toasted almond pieces1/2 cup golden raisins1/4 cup bacon bitsSauce:1 cup fat free mayonnaise1/4 cup granulated sugar3 tbsp apple cider vinegar
Chop broccoli into small pieces.
Toast almond pieces in frying pan.
Add broccoli, almonds, raisins and bacon bits to large bowl.
In separate bowl, mix mayo and sugar.
When combined, add apple cider vinegar and mix very well.
Add dressing to salad right before serving so salad will be crisp.

This is wonderful! I made it today and used Splenda in place of sugar since my dh is diabetic. We loved it. Would be a great dish for a salad or potluck dinner. It's also going on my list of holiday meals side dishes. Soak the raisins in a cup of hot water for about 5 minutes, then drain. - 1/18/09

Made this for a barbeque we had yesterday. Everyone loved it. Instead of waiting to add the dressing, I mixed everything together and let it marinate in the fridge for a few hours. REALLY good. Veggies and everything were still crisp. Thanks for the recipe, I can't wait for the leftovers! - 4/21/08

This looks like a reduced fat version of Joan's Broccoli Madness from Soupplantation/Sweet Tomato. I use light mayonnaise instead of fat free but use less of it on the salad. The the other half of the dressing keeps for up to a week in the fridge. I also use a raisin medley from Fresh & Easy. YUM! - 3/3/11

Brought it for a pot luck and the bowl was empty when I brought it home! Didn't use all the dressing, considered using Splenda instead of sugar, but the calorie count didn't really warrent it, so I left it as is. Used salad topping sliced almonds right out of the bag. Great recipe. - 2/9/11
