Red Lentil Soup - Indian Flavored

Ingredients
3 cups chopped onions3 cups carrots 3 cups celery3 cloves minced garlic8 cups of water2 tbsp ground cumin1 tbsp ground thyme1 tbsp ground tumeric1 tsp ground ginger3 bay leaves8 tsp chicken bouillon2 cups of red lentils dry2 cups of frozen peas1 can navy beans
Directions
Chop vegetables, add water, seasonings and lentils (rinsed). Cover pot, bring to boil, simmer 30 minutes. To thicken soup, remove from heat and puree about half the soup or use an immersible blender. Return to heat add frozen peas and simmer 2 more minutes. Before serving add 1 can of white beans (rinsed) or your favorite beans.
