Orange Peanut Salad Dressing

Ingredients
1/2 c. orange juice (fresh is best)1/4 cup raw cashews1/4 cup natural peanut butter1 clove garlic2 Tbs low-sodium soy sauce2 Tbs apple cider vinegar1 Tbs ginger root (to taste)2 Tbs canola oil
Directions
Fresh-squeeze the orange juice if possible. Soak the cashews in the juice to help soften them, about 10-15 minutes. Peel the ginger and garlic. Then put it all in a blender, and blend till smooth!

Serving Size: makes 1 cup, good for eight 2-Tbs servings
