Lite Sauteed Rice, Tofu & Veggies

3 tsp canola oil1 package Sunrise Extra Firm Tofu (340 grams)0.5 cup chopped raw onion0.5 cup diced celery0.25 cup chopped green pepper0.5 cup chopped yellow or orange bell pepper0.5 cup chopped broccoli0.5 cup chopped carrot2 cups cooked brown rice2 tbs Lite Tamari Soy Sauce
Mcrowave carrots & broccoli for 2.5 minutes (or steam or boil until slight crisp) and set aside.
Cut tofu into 0.5 inch cubes.
Heat oil in large fry pan. Add tofu and saute until lightly browned, add onion, celery, and peppers and sautee on medium heat until vegetables are slightly soft. Add brown rice, cooked carrots and broccoli and Tamari Lite Soy Sauce. Stir until heated through.
Serving Size: makes 5, 1.5 cup servings
