Brussel Sprout and Onion Scramble

Ingredients
4 brussel sprouts shaved on mandolyn½ cup chopped onion2 cloves garlic2 jumbo eggspinch of salt2 tsps Olive Oil
Directions
Shave brussel sprouts on mandolyn after cleaning and removing the bottom tough part.

Chop ½ cup red onion and 2 cloves garlic.

Sautee onion, garlic and brussel sprouts in 2 tsps olive oil on low heat for about five minutes. Sprinkle with salt.

Crack two jumbo eggs into pan and stir to scramble. Cook until eggs are cooked through.
