Cranberry Orange Bread

2 cups flour--all purpose8 tbsp Splenda for baking1 1/2 tsps baking powder1/2 tsp baking soda3/4 tsp salt1 large orange, juice and zest (can use 1/5 tbsp orange oil and 3/4 cup orange juice)3/4 cup low fat sour cream (can substitute 3/4 c buttermilk or 3/4 plain yogurt)1 large egg, beaten3 tbsp vegetable oil1 cup cranberries, chopped (fresh or frozen)
1. preheat oven to 350 degrees, grease 9x5 baking pan
2. In large bowl, whisk flour, splenda, baking powder, baking soda and salt.
3. In medium bowl, combine orange juice, zest, egg, vegetable oil and sour cream.
4. combine wet and dry ingredients. Stir in cranberries. Pour batter into baking pan. Bake for 55 to 65 minutes or until tester comes out clean and the bread pulls away from the edges. Let cool for 15 minutes in pan, then remove from pan and cool completely.
Serving Size: makes 8 slices
