Vegan Mashed Potatoes

Ingredients
300g russett potatoes300g red potatoes1 Tbsp Earth Balance spread1/4 cup Silk unsweetened original Soymilk4 cloves of garlic, blanced1 tsp saltnutmeg to taste
Directions
Scrub and chop potatoes. Boil in very salty water until fork-tender (up to 30 minutes). Drain and return to pot.

Meanwhile blanch cloves of garlic in boiling water. Blanch for 2-3 minutes then change water and repeat 2-3 times. This removes some of the harshness from the garlic. Drain. Add to potatoes

Sprinkle with nutmeg, up to 1/2 tsp. Add salt. Mash. Add Earth Balance and milk. You can add more Earth Balance and/or 'milk' for creamier potatoes.
