Baked Eggplant Parmesan

1 medium eggplant sliced1/2 cup plain breadcrumbs, add seasonings to taste2/5 tbsp grated parmesan cheeseOlive Oil spray
Slice eggplant, place on baking sheet, spray quickly with the olive oil spray then cover with 1/2 of the breadcrumbs and 1/2 of the cheese. Place in 350 degree oven for 10 minutes. Remove the baking sheet and turn over the slices. Cover with remaining breadcrumbs and cheese and return to the oven for another 10 minutes. You may need to put under the broiler for a minute to crisp up the breadcrumbs on top.
