2 cans evaporated milk2 cans creamed corn1 can reduced sodium yellow sweet corn5 tablespoons chopped fresh cilantro1 tablespoon dry dill weed2 tablespoons dry basil2 tablespoons garlic powder1 tsp salt(optional)Black pepper to taste1 tablespoon olive oil1 small onion, diced (about 1/4 cup worth)Six 4oz Swai fillets, cut up into bite sized pieces
Saute onions in olive oil. Add the fish and the seasonings. Pour in the evaporated milk and corn. Stir often to prevent scalding. Soup is done when the fish is cooked and the "broth" is starting to be bubbly.
