Sweet Potato Quinoa Chili

Ingredients
2 cans black beans rinsed & drained1 cup dry quinoa3 medium sweet potatoes6 cups vegetable broth1 - 6oz can tomato paste5 cloves garlic1 onion diced1 Tbsp olive oil1 Tbsp cumin1 Tbsp chili powder1 tsp oregano
Directions
Saute onion in oil. Add garlic & saute 2 min. Stir in tomato paste, cumin, chili powder & oregano. Add vegetable broth, black beans & sweet potatoes. Cook 5 min. Stir in quinoa & cook an additonal 15 - 30 min.

    This is a great recipe. Very simple to make and great flavor. I used beans that I had cooked earlier and froze and no salt veg broth to cut down on sodium. - 10/19/14
