BBQ Chicken Cornbread Bake (OAMC)

Ingredients
1 can whole corn kernels, drained2 can creamed corn2 c greek yogurt, plain1 1/3 c Flour1 c yellow cornmeal6 T splenda2 T Baking Powder1/2 t Salt4 eggs3 lbs chicken, chopped 2 c low fat cheese, shredded***SAUCE*** (sub 2 cups prepared sauce)1 c ketchup1/2 c red wine vinegar1/2 c Worcestershire sauce1/2 c splenda1/2 T molasses5 cloves garlic1/2 T minced onion3/4 t dry mustard1/2 t black pepper
Directions
FREEZING DAY: Preheat the oven to 350 degrees. Lightly spray 4 8x8-inch pan with cooking spray. Mix together corn, creamed corn, yogurt, flour, cornmeal, sugar, baking powder, salt, and eggs. Pour into prepared pans. Bake 30 minutes. Cook chicken. Mix all sauce ingredients in bowl. Shred chicken and toss with BBQ sauce. Remove cornbread casserole from oven. Top with chicken mixture and top with cheese. Freeze.

SERVING DAY: Thaw in refrigerator overnight. Preheat the oven to 350 degrees. Bake covered for 20 minutes, or until cheese is melted and cornbread is done.
