1 onion, chopped1 TBSP olive oil1-pound green beans, but into 2-inch lengths1 28 oz. can whole plum tomatoes with juice2 zuchinnis, cut into half moons1 large potatoe, peeled and cut into cubes1/4 cup white wine garlic, salt, pepper, cayenne, oregano, thyme
Saute chopped onion in olive oil in a large pot until softened, about 5 minutes. Add green beans, stir and cook for about 5 minutes. Add tomatoes, zucchini, potato, wine, salt, pepper, cayenne, oregano, thyme, and garlic.
Bring to boil. Reduce heat, cover and simmer about 40-60 minutes or until potatoes are tender. Garnish with fresh parsley and server with chunks of crusty bread.
