4 beef rib bones (from large-end roast, roasted with kosher salt, thyme, and freshly cracked mixed peppercorns)3 T coconut oil2 T butterone each red and sweet onion, thinly slicedraw babycut carrotswater sufficient
Cut ribs from roast, leaving about 1/2 " meat
Slice onions thinly and saute until slightly caramelized in coconut oil, leftover beef fat trim, and butter
Add rib bones, carrots, and sufficient water to cover
Bring to gentle boil, then reduce and simmer 1-2 hours, checking fluid level occasionally
Strain and chill to remove excess fat
Should make about 8 half-cup servings
Serving Size: 8 1/2 cup servings
