2T Olive Oil1 Onion chopped1 Fennel Bulb chopped1 lb Zucchini chopped1 head of escarole chopped2 ribs celery chopped3 cloves garlic diced1 can diced tomatoes with juice1 can of white beans rinsed and drained1lb lg shrimp peeled and deveined5 cups wateroregano, salt and pepper
saute onion, fennel, celery,garlic , and seasoning in olive oil for approx. 10 minutes. Add escarole and zucchini, cook for another 10 minutes. Add tomatoes and water, cook for another 10 minutes. Add beans and shrimp and cook for another 2 minutes.
