Eric's Hand Rolled Chocolate Truffles

Ingredients
1 ¾ - 2+ cups quick oats (use only 1 ½ cups for first mixture; save remaining for added thickening)½ cup almond milk¼ cup+ cocoa powder6-7 Tbsp maple syrup (or 3-4 Tbsp Agave)½ cup walnuts½ cup raisins 3 Tbsp almond or peanut butter
Directions
Combine maple syrup, almond milk, and cocoa in saucepan. Mix at medium-low heat until fully mixed, about 2-3 minutes. Add nut butter and stir for additional 2 minutes. Add oats, raisins, and walnuts to the mixture. Stir at low heat until liquid is absorbed by the oats and fully combined. Consistency should be thick enough to form a loose cookie ball. If necessary, add remaining oats (about ¼ cup). If consistency is still not thick enough, continue to stir at low heat for additional 3-4 minutes. Using a spoon and fork, shape into loose ping-pong ball sized shapes and place on a tray to cool. Using a sprinkle of cocoa powder in the palm of your hand, further shape into a small ball using both palms and a circular motion. Place on serving tray and lightly sprinkle all balls with cocoa. Makes about 20, keep refrigerated for 12 hours.
