Ka-Pow! Omlette

Ingredients
3 large egg whites1/2 egg yolk4 large cooked, defrosted shrimp, chopped1/4 cup green onions, finely chopped1 cup triple washed baby spinach, coarsely chopped1/2 tbsp. Parmesan cheese1/4 tsp. garlic powder1/2 tbsp. extra virgin olive oil1/2 a pat of butter1/4 cup pickled jalapenos or pickled jalapenos and carrot mix
Directions
Preheat small frying pan at medium-high heat.

Coarsely chop large cooked shrimp, spinach, pickled jalapenos, and green onion. Separate egg whites from yolk, but save 1/2 of an egg yolk. Beat until frothy.

Add olive oil and a smidgen of butter to the pan. Immediately add chopped ingredients. Stir to mix and add egg. Reduce heat to medium and sprinkle Parmesan cheese. Cover and cook for 3 minutes or until egg is fluffy and no longer runny.

Carefully flip over and fold in half. Serve immediately and enjoy!!
