Penne with Beef and Arugula

Ingredients
1 (1 lbs) New York strip steak1 tsp herbs de Province1 garlic clove, minced3/4 cup extra-virgin olive oil, plus 3 tbsp1 lbs penne pasta1/4 c balsamic vinegar2 tbsp Dijon mustardsalt and pepper1/4 c chopped fresh basil1/4 c chopped fresh parsley2 c arugula
Directions
Season steak with salt and pepper, herbs de province, and minced garlic. In a skillet, heat 3 tbsp extra-virgin olive oil over medium heat. Cook steak about 7 minutes per side. Remove meat from pan and let it sit 5 minutes. Thinly slice steak. set aside. Meanwhile, boil large pot of salted water. Add pasta and cook 8-10 minutes, until firm. Drain pasta, reserving 1/4 cup pasta water. In a small bowl, whisk together balsamic vinegar, Dijon mustard, 1/2 tsp salt, 1/2 tsp pepper, fresh herbs, and 3/4 c olive oil. in a large bowl toss pasta with reserved water and half the dressing. add the arugula, steak, and the rest of the dressing. toss and serve

    I love this recipe, I have been making it a few times a year since I got the cookbook last year. I now prepare the beef the same and eat it over a bed of fresh greens instead of mixing it with pasta. - 1/14/09
