Chicken Supreme

Ingredients
6 chicken thighs (can leave bone in)2 Tablespoons tomato paste4 bacon rashers, diced2 Tablespoons seasoned flour1 medium red capsicum (pepper)1 large onion, chopped2 cups chicken stock500 g mushrooms, sliced2-3 carrots, finely chopped
Directions
Serves 6
1. Preheat oven to 160C
2. Fry onion and bacon in a large frying pan. Add mushrooms and cook gently.
3. Remove and brown chicken which has been coated in flour.
4. Add all ingredients to a large casserole dish, cover and cook for 2 1/2 hours.
5. After cooking for 2 hours remove lid for the last half an hour of cooking.
