Cauliflower Rice with Black Beans

6 cups of cauliflower rice - steamed3 cups of brown rice cooked3.5 cups of black beans from can rinsed and drained1/4 cup of chopped purple onion1/4 cup of chopped cilantro1 tbsp of cumin1/2 tbsp of sweet ground chipolte spice (optional)Salt Pepper1 lime squeezed over top
Grate cauliflower until rice consistency in food processor or Vitamix. I use a Vitamix. Put a few heads in at a time, keep in low, blend until like rice, put in large bowl and repeat until you go through two heads.
Steam the "rice" in the microwave while your brown rice cook on stove. I just cover a big bowl with wax paper and add about 1/4 cup of water. Cook 3 min., stir, cook 2 more min.
After brown rice, cauliflower rice is done, mix all ingredients in large bowl and portion our for a week of lunches!
Serving Size: 6 - equal sized servings (about 1.5 - 2 cups)
