Crockpot Chicken, Sweet Potato, and Kale Stew

Ingredients
4 or 5 sweet potatoes, cut into chunks4 boneless, skinless chicken thighs cut into chunks1 medium onion, sliced3 cloves garlic1/2 package of kale, chopped1/2 tsp dried thyme or 1 tbsp fresh1 tsp dried basil1/2 tsp dried ginger2 or 3 bay leavessalt & pepper1 can diced tomatoes1 can tomato sauce8 (or so) cups chicken or turkey broth
Directions
Place chicken, sweet potatoes, onion, and garlic in crockpot. Add broth until about 1/2 way of the pot, then add tomato sauce, diced tomatoes, and spices and stir until blended. Turn the crockpot to desired setting (4 hours on high, 6 hours on low). When the chicken is finished cooking add the kale to the pot and stir. When the kale has wilted, the stew is ready to eat!
