Bruschetta Triscuit

Ingredients
7 Triscuit Reduced Fat Cracker1 T olive bruschetta or tapenade1/2 jalapeno pepper, seeded & sliced (or pickled)1 slice low fat Cheddar or Colby cheese
Directions
Plase crackers on aluminum foil on toaster oven tray. Divide olive mixture between crackers and top each with a jalapeno slice. Divide cheese into 7 pieces and top each cracker. Bake in toaster oven until cheese is melted and bubbly. Very good with tomato slices, red peppers and avocado slices on the side.
