Chocolate peppermint merengues

Ingredients
2 egg whites, room temperature2/3 c granulated sugar1/2c mini chocolate chips2 candy canes, crushed2 drops green food coloringa few drops of Peppermint extract, optional.
Directions
Preheat oven to 325 degrees.

Beat egg whites until stiff, adding a little of the sugar at a time and the extract and food coloring, if using. When able to stand in peaks, fold in the chocolate chips and candy canes.

Drop by Tablespoons onto parchment- or foil- lined cookie sheets.

Place in oven and turn oven off. Leave overnight. They will be ready int he morning!
