Lean Beef Shepard's Pie

Ingredients
1 lb ground beef3 cups mixed veggies (corn, green beans, carrots, peas)1 15 oz can of tomato sauce2 cups mashed potatoes (I used instant because it's what I had, but you can easily make your own)a sprinkle of shredded cheese on top
Directions
Brown ground beef (season to your taste, I usually use rosemary, italian seasoning, and some pepper). Mix beef, can of tomato sauce, and mixed veggies in the bottom of the casserole dish. Make mashed potatoes and spread a thin layer over the top. Sprinkle some shredded cheese over the mashed potatoes. Put in the oven on 350 for about 30 mins (or until the cheese browns a bit). Let cool for 5 mins and then eat!

Serving Size: makes 4 servings - could be stretched to 6 if you want something smaller (it's all about how many pieces you cut the pie in)
