Kale & Corn Soup

Ingredients
6 Cups kale, cleaned & chopped1 Tbsp olive oil1 medium onion, sliced thinly3 Cups corn, frozen or canned6 Cups vegetable broth
Directions
Thoroughly wash and rinse kale, then chop into bite size pieces.

In a large pot over medium heat, put in olive oil & onions. Cook until translucent.

Add in corn,kale, & vegetable broth. Turn up heat & bring to a boil. Once it begins to boil, lower heat & simmer another 10-15 minutes.
