barley soup

Ingredients
12 cups chicken stock3 cups bite-size chicken breast1 large onion chopped4 stalks celery chopped2-3 cups sliced mushrooms1 large parsnip sliced thin1 cup pearl barley1 tsp. dried basil2 cloves minced garlic1 tsp ground pepperSalt and pepper to taste
Directions
Combine all ingredients except salt and pepper and simmer until the barley is cooked, about 45 minutes. Season with salt and pepper if needed.
