White Onion Soup

Ingredients
Melt butter in large heavy pan, and on a low heat cook onions without browning them - for about 5 minutes. Next stir in one tablespoon of plain white flour, stirring constantly, and cook on lowest heat for one minute. Then add half a pint of hot but not boiling water. Cook for 10 minutes. Add 2 cups of milk, nutmeg and stock cube and cook for another 20 minutes. Season to taste. Blend until smooth.Top each serving with about a teaspoonful of cream cheese. I used light garlic and herb.
