12 oz. fingerling potatoes, uncooked, washed, and cut in half lengthwise2 tsp. EVOO1 Tbsp. garlic, minced1 Tbsp. fresh rosemary, chopped1/8 tsp. salt1/8 tsp. black pepper
1. Pre-heat oven to 400 F.
2. Toss potatoes with EVOO. Spread potatoes on a cookie sheet, in a single layer.
3. Sprinkle with garlic, rosemary, salt and pepper.
4. Roast for 15 minutes; flip/stir potatoes, and roast for 15 more minutes.
Serving Size: Makes 4 (1/2 cup) servings
