Classic Tomato Sauce and Meatballs (1/4 of recipe)

Ingredients
1 lb of chuck steak, ground2 slices white bread, torn into small pieces1/2 c. low-fat buttermilk1/4 c. grated Parmesan cheese1 large egg yolkAdd buttermilk and bread together in medium mixing bowl and mash together with fork until well combined. Add remaining ingredients and S&P to taste. Mix well then form into meatballs (about 3 TB each, yielding ~14 meatballs).Brown meatballs in 2 TB olive oil, turning to cook evenly. Remove from pan and set aside.Add the following to the pan:1 28-oz can crushed tomatoes1 tsp minced garlic2 TB olive oil1 TB fresh minced basilSalt and pepper to tasteBring to a boil, then lower heat and simmer gently for 10 minutes. Add meatballs to sauce and continue simmering for another 5 minutes until meatballs are warmed through.Makes 4 servings. Serve over pasta.
