Chicken Enchiladas

Ingredients
I whole chicken1-2 packages of dry white gravy mix 2 C low fat cheddar cheese or cheese of your choice1 C chopped onion1 package low fat burrito size tortillas1 T chili powder or to tastesalt & pepper to taste
Directions
Boil chicken and remove skin, discard. Remove from bone saving only the white meat
cook gravy with water according to package. Season gravy with chili powder to your taste.
put 1 T gravy on tortilla, place chicken meat, cheese and onions to taste on tortilla, roll up and place in a non stick baking pan. Repeat with all tortillas, reserving some cheese and gravy for top. Once all are wrapped and in a pan pour gravy over to cover and sprinkle remaining cheese on. Heat in 350 degree oven until cheese is melted and warmed through. These are delicious a favorite for everyone who has had them. I use low fat or fat free cheese and low fat tortillas and they are great.
