Broccoli Cheese Rice Casserole

4 cloves garlic4 tbsp butter2 cups skim milk1/4 flour 1 cup sharp shredded cheese1.5 cup cheddar shredded cheese1 large stalk of broccoli (3 cups cooked)rice (yield 3 cups cooked)1/2 tsp salt
saute butter and garlic in a saucepan. slowly wisk in flour. once completed wisk 3 minutes constantly. then add milk in slowly by wisking. once completed add 1 cup sharp and 1 cup cheddar to sauce and wisk. Wisk in Parmesan cheese. In a separate pan steam broccoli. In another saucepan cook rice to yield 3 cups cooked. Once all is cooked combine all three (sauce, broccoli, and rice together). Pour into a greased 13x9 pan, top with remaining 1/2 cheddar cheese. Bake 400 degrees for 30 mins.

I made this last night, it tastes pretty nice and is quite filling. I added mixed vegetables in with the broccoli and it turned out great :] My family enjoyed it for the most part. Just so you know though, it's SUPER bland unless you add a bunch of seasonings before baking it. - 1/14/13
