Raspberry Coulis

Ingredients
-Raspberries (10 oz)-Confectioner's Sugar (3 tbsp)-Fresh Lemon Juice (1/2 lemon yields)-Orange zest (1 tsp)-Fresh young ginger (1 tbsp worth in strips)
Directions
Throw it all in a pan, reduce on medium, then squish through a fine sieve making sure to work out every last drop of sauce. It's worth the effort.
