Baked Tandoori Chicken UK style

Grated rind of 1 lemon6 tbsp lemon juice2 level tsp salt4 chicken portions, skinned & scored1 level tsp coriander½ level tsp paprika¼ level tsp cayenne1 level tsp ground ginger½ level tsp cumin1 tbsp vinegar283g/ 10oz low fat yogurt
Mix the lemon rind, half the lemon juice & salt together in a bowl & rub into the chicken.
Mix the coriander, garlic, paprika, cayenne, ginger & cumin with the remaining lemon juice in a bowl & stir in the vinegar & yogurt.
Spread this mixture over the chicken; loosely cover with foil, & leave to marinate for at least 2 hours.
Transfer the chicken portions to a baking sheet & bake in a preheated oven at 200C, gas 6 for 15 minutes.
Remove from the oven and baste with the marinade.
Return to the oven, reduce the temperature to 180C, gas 4 and continue to bake for 1 hour or until the chicken is cooked through.
Serve with a light Salad for the perfect Meal
