spinach, potato and feta cheese pie

1 tablespoon butter room temp1/4 cup dry bread crumbs2 medium boiling potatoes, diced10 oz. package baby spinach1 1/2 tablespoon salt1 cup crumbled feta cheese2 tablespoons chopped fresh parsleygenerous seasoning with black pepper2 large eggs, beaten1/4 cup milk2 tablespoons olive oil
1. Coat bottom and sides of pie pan with butter, sprinkle bread crumbs on the plate and then rotate to coat until they cover the bottom and sides.
2. Boil potatoes for 10 minutes. Place in a large mixing bowl.
3. Wash spinach and place in colander. Sprinkle with the salt all over and leave for 30 minutes. This causes the juices to "sweat". With your hands, squeeze out all the juices. Cut the leaves roughly and place in bowl with potatoes. Mix in all remaining ingredients.
4. Preheat oven to 375.
5. Place mixture into pie pan. Bake for 40 minutes or until toothpick comes out clean. Let sit for 10 minutes. Enjoy.
