barbecue portobella quesadillas

Ingredients
Portabella Mushrooms, 1 lbBarbecue Sauce, .25 cup (8 fl oz) (remove)Cider Vinegar, 1.5 tbsp (remove)Chipotle pepper canned in adobo sauce, .5Tomato Paste, 0.08 cup (remove)Onions, raw, .5 cup, finely chopped (remove) Daiya pepper jack style shreds 1/4 cup, 1.5 serving (remove)Corn Tortillas, 4 tortilla, medium (approx 6" dia) (remove)
Directions
mix the barbecue sauce, vinegar, tomato paste and chipotle pepper and put aside - dice mushroom and cook in a skillet for about 5 minutes (the original recipe used 2 tsp of oil, but I used a non-stick skillet and some spary instead), then add onion and cook until beginning to brown - about 5-7 minutes. Mix in sauce ingredients....then use filling and cheese to make quesadillas........
