Ingredients
1 onion, chopped2 garlic cloves, chopped1 eggplant, semi-peeled , cut into 1/4" cubes2 zucchini,cut into 1" cubes1 tsp salt (optional)1/2 tsp ground pepper2 jarred roasted red peppers1 tsp of dried thyme1 cup of frozen or fresh corn28 oz can of diced tomatoes, no salt added
Directions
Put all vegetables, seasonings, tomatoes with juice, and 1 cup of water in slow cooker. Cook on low for 8 hours.
