Vegetarian Taco Salad w/ Smart Grounds

Ingredients
Calories are significanty reduced by omitting, substituting or reducing the amount of cheese, taco seasoning, sour cream and tostada. Alternate dressing may by used as well. I just used what I had on hand.Calories 604Fat 43Carbs 34Fiber 8Sugar 2.5Protien 20
Directions
Saute onions & poblano peppers in half the oil on high heat. Add corn when browned & cook through. Set aside.

Sautee smart grounds in remaining oil & heat through. Add taco seasoning as directed. Add beans.

Top tostada shells (optional) with cheese (optional). Add taco crumbles, corn & pepper mixture, chopped lettuce & red pepper slices. Top with Lime cilantro dressing and a tablespoon of sour cream. Recipe follows.
