Lemon White Wine Rice with Mushrooms

Ingredients
1 cup brown basmati rice (rinsed)1 cup dry white wine1 cup vegetable brothjuice of one lemonzest of one lemon1 clove garlic, minced1/2 tsp lemon thyme1/4 tsp black pepper4 oz oyster mushrooms, chopped2 tbs butter
Directions
Rinse rice until water runs clear (4-5 rinses)

Bring all ingredients, except the butter, to a boil. Lower heat.

Cover with a lid (wrapped in a tea tower to absorb moisture if you wish), and simmer on low for 35-45 minutes.

Turn off heat, rest covered for 10-20 minutes.

Add the butter, fluffing the rice with a fork to mix it in and give it lift. Serve warm.

Serving Size: Makes four 1/2 cup servings as a side dish
