Hearty Tomato Soup

4 Tbsp olive oil2 cans 28 oz diced tomatoes2 carrots, sliced3 -4 onions, sliced in long strips6 cups water (1 cup seperated)1 cup dry barley1 cube chicken boullion dissolved in 1 c water1/2 cup tomato sauce 1/2 c basil1 sprig fresh thyme
1. Put oil in pot, heat. Add onion and carrot, sprinkle with salt and pepper and cook 3-5 min until softenened. Add tomato paster and lower heat while stirring for 1-2 mintues.
2. Strp the thyme from stem and add to pot along with tomatoes. Cook stirring occasionally (10-15 minutes) Add 2 cups of water or juice and bring to a boil, and finally adjust to a simmer. Let it cook 5 – 10 more minutes.
3. To make it smoother, puree half of the soup batch and re-combine with remainder (optional).
Serving Size: 8 or more bowls of soup
