Quinoa and Veggies

Ingredients
1/2 cup quinoa1 chicken bouillon cube1 cup water1 carrot1 celery stick1 small onion5 whole tomatoes (canned)handful of fresh spinach1/2 cup chopped poblano pepper1/2 tsp. emerils bayou blastsalt pepper to taste1 TBSP olive oil
Directions
saute carrot,celery,onion,poblano pepper in olive oil, till soft. Add tomatoes,spinach and seasonings. Meanwhile boil water and bouillon cube,add quinoa. cook about 15 minuntes on medium high heat. Add quinoa and remaining broth to vegatables. Season with salt and pepper. Cook about another 5-10 minutes.
