1/2 cup egg beaters )(or similar)3 vine sweet mini peppers1 garlic clove chopped1 shallot sliced thin1 green onion chopped10 baby carrots1/4 cup water chestnuts3 - 4 slices of tomato chopped1/4 cup broccoli florets1/4 cup cauliflower florets1/2 cup fresh baby bella mushrooms chopped6-8 snow peas1/2 cup tofu cut into small pieceshandful of mung bean sprouts4 thai chilies chopped (less if you prefer less spicy)1 tbsp cilantro1 tsp granulated sugar1 tbsp oyster sauce1 tbsp sweet soy sauce2 tbsp canola oil1 cup cooked brown ricesalt and pepper to taste
heat oil in a wok. Add tofu and cook until brown. Add garlic, onions and shallots and cook until translucent. Add vegetables, soy, oyster, sugar. cook 2-3 minutes. Add eggs and brown rice cook 3-4 minutes or until egg is done.
