Potatoes - 1 poundSquash/Zucchini or both - 3/4 poundonions - 2 medium/largetomatoes - 1 poundolive oilgarlicGuyere Cheese Sald & Pepper
Cut onions up and sautee in olive oil until soft. Add garlic at the end. Put in the bottom of a casserole dish. Slice all other vegetables into 1/4 inch think slices. Layer the slices, alternating the vegetables and standing them up to form rows. Put in over for about 40 minutes, covered with foil. Take them out, remove foil, add cheese and continue to bake for another 30 minutes.
